Material & Construction

The blade is hot-forged from Aogami #2 carbon steel and features sanmai protective layers, combining flexibility with durability and sharpness. Use & Care

Because this knife is made entirely of carbon steel, it requires extra care. Always wash by hand and dry immediately to prevent rust. Over time, the blade will develop a natural patina, which partially protects the steel and gives it a unique character. Not dishwasher safe.
