Material & construction
The blade is forged in Seki, the knife capital of Japan. Made of high-quality ZA18 steel, sheathed in 62 layered damask folds that give each knife a unique, beautiful pattern. The knife is razor-sharp, stays sharp for a long time and is easy to resharpen on its own.
Use & care
Use this 21 cm gyuto for everyday tasks such as chopping, slicing, and portioning. While ZA-18 steel is more corrosion-resistant than carbon steel, hand washing and immediate drying are recommended to prevent staining or rust. Maintain the edge with Japanese whetstones or a fine strop for optimal performance.
