The Uteki Premium santoku has a slightly shorter, wider blade than a gyuto, which makes it more intuitive for a push-cut style and ideal for cooks who spend most of their time at the board chopping rather than rocking. The flat section near the heel keeps full contact with the cutting surface, and the tip curves up just enough for quick, clean finishing cuts.
VG10 steel hardened to 61 HRC gives the blade a 15-degree edge that handles the full range of daily kitchen tasks without needing constant maintenance. Sixty-eight layers of Damascus steel surround the core, and the tsuchime hand-hammered finish reduces drag through food. Made in Seki, Japan, in a small factory that builds each knife to be used, not displayed.
