The nakiri was designed for vegetables; and nothing else does the job better.
The flat, rectangular blade makes full contact with the board on every stroke, which means cleaner cuts with no rocking and no uncut bits left at the bottom. Cabbage, carrots, herbs, aubergine — the nakiri moves through them with a speed and precision that a rounded chef's knife simply can't match for this kind of work.
The Uteki Premium nakiri is made in Seki, Japan, from VG10 steel hardened to 61 HRC. The thin blade geometry and 15-degree edge mean very little resistance through dense produce. Sixty-eight layers of Damascus steel wrap the core and give the blade its distinctive flowing grain, while the tsuchime hand-hammered finish reduces the sticking that slows down prep work.
The octagonal Hinoki handle with plastic collar keeps the knife light and balanced, important when you're working through a pile of vegetables at speed.
