The Kazoku Uteki Premium Ebony Gyuto 21 cm is a traditional Japanese chef’s knife featuring a VG10 damascus core and classic tsuchime (hammered) finish to reduce food sticking and add character. The high-quality damascus layers around the VG10 core provide excellent cutting performance and durability, while the ergonomic ebony octagonal handle ensures comfort and control during extended use.

  • Japanese Gyuto with 21 cm blade — ideal for meat, fish, vegetables, and fruit
  • VG10 steel with high hardness (~61 HRC) for sharp edge and good retention
  • 68-layer damascus cladding for strength and aesthetic appeal
  • Tsuchime (hammered) finish reduces food sticking during slicing
  • Ebony octagonal handle with horn bolster for comfort and precise control

Material & construction

The blade is built around a VG10 steel core — a highly regarded stainless steel known for hardness and sharpness. Around the core are 68 layers of damascus steel, providing both visual depth and structural strength. The tsuchime hammered texture helps food release from the blade during cutting.

Use & care

Although damascus and VG10 are stainless, hand washing and immediate drying are recommended to keep the knife in top condition. Store dry and avoid dishwasher use.

Who it’s for

An excellent choice for hobby cooks and serious home chefs seeking a classic, versatile Gyuto knife that excels in both performance and aesthetics.
