Precision Filleting with Japanese Craftsmanship

The Kazoku Takahiro Fillet Knife (21 cm) offers exceptional sharpness at an unbeatable price. Designed for precision, this knife is perfect for filleting fish, though it is versatile enough to handle other types of meat as well. Its rigid blade ensures clean cuts, making it ideal for chefs who demand accuracy in their filleting work. Note that this knife is not flexible, designed instead to provide firm, precise control.

Crafted for Quality

The Takahiro series is Kazoku's second line of knives, and each one is a true masterpiece. Handmade in a small, traditional factory in Seki, Japan—famous for its knife-making heritage—the Takahiro is a genuine representation of Japanese craftsmanship and innovation.

Japanese VG-10 Steel

The sharpness of a knife is defined by its steel, and the Takahiro Fillet Knife uses premium Japanese VG-10 steel. This high-quality steel is known for its outstanding durability and sharpness retention. Harder than most, VG-10 steel holds its edge for an extended period, allowing for precise sharpening at a 15-degree angle. This makes the blade exceptionally thin and efficient for effortless cutting.

The blade is further reinforced with several layers of Damascus steel, which offer additional protection and reduce the risk of damage to the core. The final step in the process is the traditional tsuchime (hammering) technique, which not only enhances the knife's aesthetic appeal but also reduces friction, preventing food from sticking to the blade.

Ergonomic Handle

The handle is made of high-quality brown pakka wood, a composite material that combines the warmth of wood with the durability of plastic. This results in a handle that’s both comfortable and low-maintenance, making it easy to grip and ensuring long-lasting use without the upkeep required for pure wood.
